Muffin Week

Blueberry Buttermilk MuffinsThis week was all about muffins, from the thousands of muffin recipes that I found and liked, I only ended up making two different muffin recipes.  It was hard to choose which muffins to make but I ended up decideing on Blueberry Buttermilk Muffins and Chocolate Chip Muffins.  Both recipes turned out well (not as great as I would have liked them), but everyone at work seemed to enjoy them.  Personally I liked the blueberry muffins better, mainly because of their great flavor, but I wish the texture of the muffins (for both recipes) could have been a bit fluffier (but I'm really picky when it comes to muffins).

Chocolate Chip MuffinThe blueberry muffins had a great flavor combination from the sugar, orange zest and blueberries and their texture was more like a scone but that wasn't a bad thing.  The chocolate chip muffins were a bit sweeter in flavor with a nice hint of vanilla and sugar but I found the texture to be bit on the chewy side which was just OK.  I've posted both recipes above but I slightly altered the chocolate chip muffin recipe by replacing the nutmeg for vanilla extract and by adding chocolate chips to the batter rather than using the cinnamon sugar topping.
